Taking the humble Corn on the Cob, treating it with a little TLC and cooking it in your Airfryer will give you the most delicious Mexicsn Street Corn...Mzansi Style!

Mexican Style Street Corn

 
Ingredients

  • 2 corn cobs
  • 2 Tbsp mayonnaise
  • 1 tsp smoked paprika
  • ¼ cup finely grated parmesan or Greek feta cheese
  • 1 tsp chilli powder
  • chopped fresh coriander for garnish
  • 1 lime wedge

Method

  1. Place a large pot of cold salted water over high heat, add the corn cobs and bring to the boil. When the water reaches a rolling boil, remove the corn cobs from the pot and set aside to cool.
  2. Preheat the air fryer to 200°C.
  3. In a small bowl, mix the mayonnaise and smoked paprika. Break the corn cobs in half to fit into the air fryer. Using a pastry brush or butter knife, smear the mayonnaise mixture over the corn cobs, making sure they are covered.
  4. Place the corn cobs into the air fryer and cook for 8 minutes, turning halfway. They are done when the corn kernels are soft and slightly blistered.
  5. Remove the corn cobs from the air fryer and brush them once more with some mayonnaise
  6. Immediately roll them in the cheese until completely covered.
  7. Place the corn cobs on a serving dish, dust with the chilli powder, garnish with fresh coriander and enjoy with a squeeze of fresh lime juice.
