My cooking journey started at the tender age of ten, when my parents would host these elaborate Mexican-themed parties for their family and friends. It was a spectacle. Fajitas, margaritas, tequila, guacamole, freshly cut limes, you name it, it made an appearance on that dinner table. I was fascinated by the aromas that filled the house, not to mention the flavours. I was hooked!
Some years later, I opened my first Mexican Restaurant in Port Elizabeth, South Africa. Nestled in the heart of the city with a kitchen no bigger than a food truck. The concept and flavours centred on Mexican cuisine, but was by no means authentic. While I served many traditional and well-loved Mexican classics, I also took inspiration from all corners of the globe and fell in love with the concept of Mexican Fusion.

You will find Authentic Mexican Dishes, like the ubiquitous taco and family style Enchiladas. The book is filled with a surprising array of flavours and influences from all over the world.
I will guide you through making your own tortillas and salsas, presenting tacos, enchiladas, and quesadillas, and exploring various cooking techniques—from braising and grilling to air-frying. And let’s not forget the delicious desserts to complete your meal, along with a collection of margaritas and exciting cocktails to tantalize your taste buds.
The recipes are easy to follow, with vegetarian-friendly options clearly marked (V). Just remember the golden rule: always keep it FRESH, whether you’re cooking a meat dish or a vegetarian one.
